Capacity of geographical markets of fresh mushrooms directly depends on national traditions of a food and climatic features. In Russia, unlike Europe, America and Asia, the main part of the consumed mushrooms is wild plants and are gathered by the population in forests. In the world there is no such volume and a variety of edible wild-growing mashrooms as in Russia which biological stock is estimated more than at 4 million tons and their collecting has a wide popularity. This factor, certainly, seriously constrains development of commodity production of the cultivated mushrooms as champignons or an oyster mushroom.
Nevertheless, the last 15 years are characterized by gradual change of the domestic buyer preferences: the consumer demand obviously passes into a segment of the cultivated mushrooms. There are a few things, which are forming an impact on this tendency: universal food trends, deterioration in ecology and growth of an urbanization. By calculations of analysts of "Growth Technology", already every second mushroom on a table of citizens and population of megalopolises in Russia, was grown up in the protected soil, and in 4-5 years this ratio will change up to 2:1. Only in Moscow and Moscow area the current volume of consumer market of fresh champignons is more than 30 thousand tons per year. About 15% of all sales proposition of fresh champignons is the share of Moscow region producers. The main part of fresh mushrooms is delivered to the capital region from other areas, first of all, - from Kursk, Penza, Novgorod, Saratov, Leningrad and also from Krasnodar Krai.
